Go SensoVI Project: An Innovative Tirage Cork Stopper to Enhance the Quality of Sparkling Wine

TESA participates in the SensoVI Operational Group project, focusing on expanding knowledge about the effect of using cork stoppers during the second bottle fermentation of sparkling wines, known as tirage. The majority of producers use crown caps.

The members involved in the project are: Recaredo and Gramona wineries, Tesa and Francisco Oller sparkling wine manufacturers, and the research centers Institut Català de la Vinya i el Vi (INCAVI), Institut de Recerca i Tecnologia Agroalimentària (IRTA), and Fundació Institut Català del Suro. The latter is also responsible for project coordination.

What are the objectives of the Go SensoVI project?

The objective of the SensoVI Group is to improve the competitiveness of viticultural operations by studying the positive effect of cork stoppers in the tirage process instead of crown caps. It also aims to expand the market for the Catalan cork sector by developing a new type of cork stopper adapted to the specific conditions of the second fermentation.

The validation of this new cork stopper is carried out both analytically and sensorially. The project will also include a study of the perception of the final consumer.

Furthermore, the project also aims to increase the business volume of the Catalan cork sector through the development of this new specific stopper for tirage. This growth will have a positive impact on the increase in the area of sustainably managed cork oak forests in Catalonia, ensuring the preservation of this valuable natural resource and the legacy of our region.
